Pizza, cooked in a pan


My Pizza
Lately, I have been observing what topics of interest my visitors favor most in my blogs. Incidentally, it is -- my FOOD RECIPES! I am a certified foodie myself, a Chef, once in a while in our kitchen and a self confessed food critic.(watch out!) Since my posts are monitored on the frequency of these visits of each post, it is interesting to note upon my discovery that food is the most popular of all. Since we are a nation with a culinary diversity brought about by a long period of colonialism in the past, globalization, and the many filipinos traveling overseas. Television, magazines, cook books are the tools that brought us to the knowledge of the variety of foods that we give our attention. Food is really an interesting subject in my stories because it is one of the most essential thing in our everyday life. I will be posting many foods that would interest my visitors in my site in the future. Now, my focus of interest is the Italian PIZZA, cooked in a non stick pan. As everyone knew it is cooked in the oven few would believed in a pan. Yes, it is! With the rising cost of LPG (liquid petroleum gas) it could be a relief to those who want to save instead of cooking in the oven.


I have a good friend, Joey Gallego from Pasig, who works in ADB who tasted my Pizza before, could not believe I can make a delicious Pizza better than he had eaten from some of these pizza shops around. He insisted to me to share him my recipe so his family could try it especially his wife and her children who like pizza. Being a good friend, I did not hesitate to give him my recipe. I told him that my recipe is available in my blog, life's treat: PIZZA PIE, GOLLY WOW.(http:\\www.alfonsoereve.blogspot.com\). I gave him a print out of my blog but, incidentally, he had a problem. He did not have an oven in his kitchen at home. So I gave him an old recipe which I learned it before which I would like to share with you, especially for those who have not an oven at home. The good thing about this recipe is. it is very easy to prepare.
Requirements:

1 12 to 15 inch non stick pan with cover
measuring spoons1 medium mixing bowl
 rolling pin
1 pyrex measuring cup 
1 wooden spoon
1 rubber spatula 
1 kitchen towel
flour sifter 
cheese grater



FLOUR DOUGH
Ingredients:
3 1/2 bread flour
2 tbsp vegetable oil
1 tsp salt
2 1/2 baker's yeast1 cup warm water (110C)
1 tsp sugar

DIRECTIONS:

Sift the flour in the mixing bowl. Add the salt and 1 tbsp vegetable oil. Mix the flour mixture with wooden spoon until it is thouroughly mixed. Meanwhile, mix the yeast and sugar to the warm water in a cup. After 5-6 minutes, the yeast mixture will turn foamy, then make a well in the flour mixture in the bowl. Then pour the yeast mixture into it and mix with the wooden spoon until crumbly. Place in the floured board and knead it. Form the flour into a ball and with the heel of your palm, push the dough as far as you can go then lift it with your hands. Repeating this manner continuosly for 10 minutes until the texture becomes firm and elastic. Then, form into a ball by sealling the bottom. In the mixing bowl, pour the remaining oil at the bottom of the bowl then tap the oil with your hand, put the dough inside the bowl and then tap the surface of the dough with your oiled hand and cover it with the towel. Wait for 45 minutes to 1 hour until the dough has doubled its size. Punch the dough with your fist in order for the gas to escape. Then, divide the dough into 3 parts.

DEREKSYON SA SALITANG PILIPINO:

I-sift ang harena sa mixing bowl. Ilagay ang asin at 1 kutsara ng mantika. Ihalo nang mabuti sa pamamagitan ng wooden spoon. Ihalo ang yeast at asukal sa maligamgam na tubig sa tasa at hayaan itong matunaw. Pagkaraan ng 5-6 minuto, may makikita ka na pagbabago sa tubig at ito'y umalsa at lumago ang yeast. Gumawa ka ng lawa sa harena at dito mo ihalo ang yeast mixture pagkatapos ay ihalo mo ng wooden spoon hanggang sa mahalo nang husto. Pagkatapos, ilagay ang nahalong harena sa mesa na may lagay na harena para hindi mag dikit. Masahin ito sa pamamagitan ng pagtulak ng iyong palad sa masa palayo sayo hanggang dulo at damputin ang harena at ulit-ulitin ito hanggang 10 minuto. Mapapansin mo na gumaganda ang texture o anyo ng harena. Ilagay ang nalalabing mantika sa mixing bowl at hawakan mo mantika sa isang kamay habang inilalagay mo ang nahalong harena sa bowl tapos itap-tap mo ang mantika sa kabuuan nito. Ilagay ang towel bilang cover. Mag antay ng 45 minutos o hanggang 1 oras. Makikita mo na dumuble ang laki nito. Sa pamamagitan ng iyong kamao, suntukin mo nang malakas ang bola ng harena sa bowl at mararamdaman mo ang hangin sa loob at pag singaw nito. Haluin sa bola uli at masahin nang 3-4 na minuto. Hatiin sa apat ang harena at gilingin mo ito ng rolling pin nang isa-isa at iporma mo ito nang pabilog.


PIZZA TOPPINGS

300 grms cooked Tomato Sauce

150 grms mozzarella sliced cheese (Available at Market, Market Supermarket)

200 grms Magnolia quick melt cheese

3 tbsps corn oil or olive oil

150 grms pepperoni saussage, sliced thinly

white onions, sliced

Pizza Seasoning (McCormick)

green peppers, sliced

3 cloves garlic

DIRECTION:

Prepare the dough by shaping into a 10 inch circle by a rolling pin. Dust the surface with a flour and place the first dough by rolling it with the pin. If you cannot make a good circle, never mind, a good practice will make you a good pizza maker. Heat the non stick pan in medium fire. Place the dough with your 2 hands holding it, then cover it. Allow it to cook until brown, then flip it upside down, then turn off the fire. Do not take out the dough from the pan. With the cooked dough upside, place the 1 tbsp corn oil, spreading evenly at the surface of the dough. Place the tomato sauce at the center of the dough and scrape it evenly with your spoon. Put the sliced mozzarella evenly at the dough but be sure to divide evenly among the 3 doughs. Then, put the magnolia quick melt cheese by shredding with the pizza grater. Then put the sausage, onions, garlic, and sliced green bell pepper. Then, turn the stove on again to medium fire, then cover it. After a few minutes, open the cover and check if the cheese has melted thoroughly. Also check the bottom of the dough if it turned brown. As soon as it is done, follow the same procedure to the next doughs.
